Spaghetti con quasi crema di asparagi

Nel grande libro non scritto della pasta della domenica, questa va di diritto ai primi posti della categoria paste di primavera. Il condimento è risultato praticamente cremoso, con pezzetti di asparagi ancora interi. L'aggiunta di pecan e scorza di limone ha dato un sapore molto ricco ai già saporosi asparagi. Foto scarsina, fatta all'ultimo minuto, dopo l'assaggio, perché non avevo pensato di parlarne.

Gli asparagi, lasciando più lunghe le punte, li ho tagliati a tocchetti e li ho messi a bagno.

In un tegame a fondo spesso ho fatto un soffritto di giovane aglio e diversi cipollotti.

Appena questi sono diventati trasparenti e prima che incominciassero ad arrossire, li ho fatti raggiungere dagli asparagi grondandi della loro acqua.

Ho fatto saltare per qualche minuto, ho salato e ho incoperchiato lasciando la fiamma abbastanza vivace.

Dopo cinque minuti ho aggiunto un mezzo bicchiere d'acqua, ho mescolato bene e ho proseguito per altri cinque.

A questo punto gli asparagi si erano quasi asciugati e molto ammorbiditi. Ho aggiunto ancora pochissima acqua, un bel trito di prezzemolo, un generoso pezzetto di burro, ho spento il fuoco e ho incoperchiato.

Ho messo nel frullatore tre belle scorzette di limone e del parmigiano. Poi ho aggiunto delle noci e ho dato ancora due frullate. Le noci dovevano essere tritate ma non troppo.

Ci sarebbero andati a meraviglia degli spaghetti alla chitarra o delle fettuccine, ma anche gli eccellenti spaghetti di Gragnano sono stati all'altezza.

Cut green asparagus in half inch segments, leaving the spears longer and put them in water.
In a heavy bottomed pan sweat in olive oil some garlic (the very young one if you can fibd it) and several scallions, also cut in segmnets.
As soon as the scallions are translucent, add the asparagus dripping with their water. Stir fry for a couple of minutes, add salt, cover and cook for abaut 5 minutes.
At this point the asparagus should be tender and almost dry. Add another small amount of water, some very finely chopped parsley and some butter (up to you the quantity). Cover the pan and cut the fire.
Put some lemon zest and parmisan cheese in a mixer and grate it finely, add some pecans and turn again so that the nuts are not too finely chopped.
Cook the pasta, add to the pan, add the cheese/nut mixture.
Quickest done than translated...
