Coda di rospo di Le Guilvinec, Bretagna. Filet of monkfish.

Davvero era così fresca, dalla barca alla pescheria, che scodinzolava. Inoltre le locali botteghe ti rendono tutto più facile pulendo e preparando il pesce alla perfezione, pronto a cadere in tegame.

Dunque, il filetto di coda di rospo tagliato a pezzotti e infarinato l'ho messo a rosolare in burro demi sel e aglio selvatico trovato nei campi (non so invero se fosse ursino) e sminuzzato.

Appena dorato da tutte le parti l'ho prelevato e messo da parte.

Nello stesso wok ho aggiunto un poco di burro, una mezza cipolla molto finemente affettata e ho fatto sudare, evitando che prendesse colore.

Poi ho bagnato con un bicchierino scarso di pastis (non meravigliatevi troppo, già fatta congiunzione con pesce) e ho fatto sfumare.

A questo punto ho aggiunto dei pomodori pelati, una bella macinata di pepe nero e ho fatto cuocere lentamente per una ventina di minuti in modo da avere una salsa bella densa.

Ho rimesso la coda di rospo nel tegame, ho fatto andare per alcuni minuti e ho aggiunto una cucchiaiata di crème fraîche per rendere la salsa setosa.

a filet of monkfish, well cleaned and cut into chunks. Dust them with flour. Melt butter  (or oil!)in a wok or pan that can contain them in one layer, add  chopped wild garlic and cook till slightly browned and crispy.  With slotted spoon  remove from pan and set aside.
Add a little butter (or oil) to the pan and a thinly sliced half onion. Let it cook gently for a few minutes till translucent. Add abt.4 tablespoon pastis (this gives a definite taste, but… dry vermouth or another alcohol will do) and deglaze. Add pealed tomatoes, give a good sprinkling of black pepper, add salt and let it cook for about 20 minutus till the sauce has reduced.
At this point add the fish, stir well and add a tablespoon of sour cream to make your sauce as smooth as silk...

Ho già commentato il tuo viaggio in Bretagna, che altro aggiungere a questa ricetta? da provere sicuramente.
