Forse non la dovrei chiamare così perchè la vera pasta e foglie è quella che faceva un mio amico di origine lucana ed era diversa. Ma di fatto così è, pasta e foglie.

Che poi in fondo non sono che una delle svariatissime forme di pane ad anello. La primissima infanzia mi ricorda simili anelli, infilati su dei bastoni che le donne delle isole di fronte a Zara portavano (o portavano via?) al mercato. Il raccolto verduroso di ieri mi ha gridato: thoran. Riportata a Tellicherry sulla costa nord del Malabar, Kerala. Magari qualcuno ne conosce il nome perchè di lì viene, si dice, il miglior pepe nero del mondo. Comunque è uno dei posti dove venivano raccolte tutte quelle spezie preziose che poi venivano caricate sulle grandi navi che le portavano in Europa.

Da Artemisia che fa una ricetta di Maison e Jardin. 

Per 6 persone.

1 arancio a persona, tagliato a fette sottili; le bucce tagliarle a julienne eliminando la parte bianca.

Un bicchiere di cognac, un bicchiere di zucchero; mescolare, lasciar riposare quanche minuto, versare sulle arance affettate.

Non avrei mai pensato che avrei trovato Tobiolo, l'Angelo, il cane,  il trio caro ad AAA, tra i biscotti. Valutando i cachi, ovvero i "diospiros", o pane degli dei, diversi anni fa, in un momento di sperimentazione di tatin sia dolci che salate, mi chiesi: come verrà? E ho provato.

Mi restavano due degli immensi cachi tosti e tardivi con cui avevo fatto una tatin dolce; avevo voglia di ripetere una tatin, ma questa volta salata; e se nella prima avevo usato quattro cachi e puntato su una massa polputa, qui avrei dovuto adattarmi a uno strato sottile. Nel bellissimo mercato di Padova la mattina di capodanno trovo dei fondi di carciofo immensi, scavati a barchetta; come non pensare di farne il guscio per delle piccole quiche?

Per otto fondi.

Sbollentarli in acqua bollente salata per qualche minuto, in modo da cuocerli molto al dente. Scolarli e allinearli entro una teglia coperta di carta da forno.

Diciannove fiori di vetro di commovente bellezza. Lascio una scintillante laguna cui fa corona un arco di monti innevati che la trasparenza del cielo permette di contare cima per cima, percorsa da sfreccianti barchini verde ramarro condotti da scatenate befane. Venezia sorprende.

200g di  farina00, 150g di burro, un cucchiaio raso di fiori finocchio e uno di grani del paradiso (se non li avete, sostituite con tre quarti di cucchiaio di pepe nero) , 50g di parmigiano grattugiato. Un pizzico di sale. 

Stendere la pasta e ritagliarla con un coppapasta rotondo di 5cm di diametro.

Avendo provato i Troppo Buoni con il cioccolato fondente e con quello al latte, ho buttato nella mischia, con qualche perplessità, quello bianco; ho così scoperto che alcuni preferiscono proprio questi (non io, che continuo a preferire i fondentissimi) forse un po' più dolci, meno friabili; però constato che hanno una certa popolarità.

Cuocere per 30' 400g di castagne sbucciate in 1/2l. di latte con una stecca di vaniglia (io le ho bollite, dopo averle incise, con tutta la buccia, levando poi anche la pellicina finché sono ancora calde, quindi le ho passate con 250g. di panna fresca). 

Frullare tutto nel robot.

Stasera cena per le vichinghe che vengono a custodire la casa. 
Nell'orto trovo un piccolo meraviglioso cavolfiore che non avrebbe atteso il mio ritorno (e  so che le vichinghe tendono a ignorare). Ne faccio un antipastino leggerissimo che mi sembra anche molto appropriato per il dopo festeggiamenti.

Uno stinco di maiale tagliato più su del ginocchio e poi fatto a pezzi dal macellaio.

In teglia con un mazzetto guarnito timo -  rosmarino - salvia, qualche scalogno e qualche fettina di lardo.

Bagnato con un po' di vino bianco caldo durante la lunga cottura: forno a 150°  per sei sette ore.

Mele intere, con buccia e semi, a pezzi in pentola con del succo di lime, un po' di zenzero fresco grattugiato e qualche bacca di ginepro.

Amo le frattaglie che credo stiano diventando sempre meno popolari nella cucina di tutti i giorni. In casa mia poi sono la sola ad apprezzarle e quindi arrivano rarissimamente. Amedeo è via quindi i gatti ballano, soprattutto Rossini, perchè Polverina sdegna. Mi sono comperata un lussuoso lucente rognone e ho pensato di pescare nel vecchio Artusi. Un kg di pere decana sbucciate e a tocchetti, bagnate con il succo di un limone e frullate finemente con 3 cucchiai colmi di zucchero. 

Mettere a bagno in acqua fredda 20g di colla di pesce. 

Scaldare un po' di crema di pera fino a che non è calda ma non bollente e sciogliervi la colla strizzata.
